Egyptian Spinach (Molokhia)

Leave several healthy plants unharvested toward the end of the season.

Allow them to flower and develop long seed capsules. Wait until the capsules mature and begin drying, but collect them before they split open.

Dry the pods completely, open them, separate the seed and store the dry seed in a labelled airtight container.
